Szechuan Steak or Szechuan Chicken Recipe

Here is a delicious Chinese recipe that is also quite healthy, particularly if you use chicken or a lean cut of beef. This stir fry Szechuan Steak or Szechuan Chicken recipe is healthier than most of the deep fried Chinese recipes that have gained in popularity. The addition of cilantro and peanuts to this particular recipe give just the right mix of flavor and texture.

1 lb steak (virtually any beef will do) or chicken breast. Slice into thin pieces about 1-2 inches in length.
8 oz fresh sugar snap peas (about 2 cups)
½ a whole red or green pepper sliced into peices
2 cloves garlic, minced
¼ tsp red pepper or cayenne pepper
¼ cup soy sauce
¼ cup water
1 tsp brown or white sugar
2 tsp cornstarch
1/3 cup chopped cilantro (leaves only)
2 Tbsp dry roasted peanuts, chopped into small pieces

Heat olive or vegetable oil in wok or skillet. Add sugar snap peas and green or red peppers and stir fry for about 2 minutes. Remove from skillet to a plate or bowl and add beef or chicken, garlic, and red or cayenne pepper. Stir fry until meat is brown. Combine Soy sauce, water, sugar and starch in a bowl. Return peas and peppers to pan and toss with meat. Add soy mixture and stir fry until thick. Remove from heat and serve over steamed rice. Top with cilantro and peanuts and serve hot.
