This is a perennial salad favorite that adds to almost any meal.
1 bag baby spinach
1 bag romaine lettuce
1 bag cole slaw salad
1 bag Craisins or other sweetened dried cranberries
1 jar dry roasted peanuts, salted
1 jar Brianna’s or other poppy seed dressing
Feta cheese sprinkled on top (optional)
Mix lettuce, spinach, and cole slaw together in a large salad bowl. Add half bag of craisins – be generous but don’t overdo. You can always add more. Add several handfuls of dry roasted peanuts. Mix well. Be aware that the peanuts are heavier and will tend to work their way down to the bottom of the mixture.
Add salad dressing right before you serve. Do not add and let sit, it will wilt the salad. Also, don’t add too much dressing. Add just enough to coat the mixture lightly and thoroughly. Mix well then add a few more peanuts and cranberries to top. You won’t need a whole bottle of dressing. Start with half a bottle and add small amounts till you feel it is the right consistency. Serve immediately once the dressing is stirred in. This salad does not keep well. However, the good news is that it will go quickly. It is delicious.
