This delicious quiche recipe was shared with us by Jan Morris and Caryn Hobbs of Evergreen, Colorado many years ago. My family has made this recipe religiously for a great make ahead Christmas morning breakfast recipe for years and it is something we all look forward to. Mix it up the night before and refrigerate. Add a couple of ingredients in the morning and pop it into the oven about an hour and a half before you are ready to eat. It is delicious and doesn’t require much of anything else. We sometimes add a few toasted bagels and some orange juice. Everyone who eats this absolutely raves about it. Give this breakfast quiche recipe a try! It also makes a great brunch recipe.
8 slices white bread
2 lbs Jimmy Dean (or other) pork sausage
9 eggs
1 Cup milk
¾ tsp. mustard
2 Cups grated Cheddar cheese
1 can cream of mushroom soup
1 small can evaporated milk
Remove crust and cube bread slices (we have tried with and without crusts and both are delicious). Place in a 9x13 Pyrex pan. Cook and drain sausage; sprinkle sausage over bread. Beat together eggs, 1 cup milk, and mustard. Pour over bread and sausage mixture. Sprinkle grated cheese over all. Cover with foil and refrigerate overnight. Mix soup and canned (not quite entire can) of evaporated milk together. Spread over mixture in pan. Back in preheated oven at 325 degrees for about an hour and a half. Cool 10 minutes before serving.
