Fresh guacamole anyone? This easy Guacamole Recipe makes for one of the greatest embellishments to virtually any Mexican meal. It is yummy as a stand alone dip or can be added on the side to a mexican recipe of any kind.
2 large ripe avocados (Note: an avocado is ripe when it “gives” just a bit when squeezed. If it is too firm it is not ripe enough. Overripe avocados will be mushy.)
½ Cup very finely chopped onion (consider a food processor to same your eyes!)
4-5 Roma tomatoes, finely chopped
Juice from two freshly squeezed limes
Salt to taste
1 jalapeno, finely chopped for a little kick (optional)
Preparation:
Mash avocados until mostly smooth but still slightly lumpy. Add juice from one lime while mashing the avocados to retain the bright green color and keep from turning brown. Stir in remaining ingredients until well mixed. Squeeze the second lime over the top when finished to keep it from discoloring.
Serve right away!! Note: Fresh guacamole will keep if refrigerated for a day or two, but is best if served almost immediately. It is naturally discolor over time.
This guacamole recipe can be served with fresh tortilla chips, crackers, or as a side for any Mexican dish.
